So - another recipe today. - Okay - so there are actually a couple of recipes!
Father's Day menu!


Pork Tenderloin Roast

This meal is perfect for company, very tender and flavorful.

What you need:
•Pork Tenderloin
•Oil or pan spray
•Craisins - a generous handful
•Peaches - 2 small
•Onion - 1/2 - 1 cup chopped

•Onion Gravy/Sauce (I had some left from pork chops this week.) Or make with:
Onion - 1 Huge or 2 medium (about 2 cups?) onion, coarsely chopped
1-2 Tablespoons butter
1 cup water
1 Tablespoon Corn Starch


Oven temp = 350º
Cook Time = 20 min per pound

Prep:
Make Onion Gravy:
Saute' onion in small amount of butter or oil
"Milk the Corn Starch" (Put Corn Starch in small tightly lidded jar, add water, shake vigorously until it looks like milk)
Add the liquid to the onion when onion becomes translucent. Stir till thickened.
STIR or whisk thoroughly to avoid lumps. 
Set aside.

Remove tenderloin from packaging (mine was 2.69 lbs., two tenderloins in pack)
Remove the "silver skin" from both loins with a thin, sharp knife. 
Spray or oil roasting pan. Lay the two loins in pan, season. Sprinkle with Paprika and Cavender's Greek Seasoning. (or your favorite seasoning)











Roast:
Cook "dry" for about half the recommended roasting time.

Add Peaches, Craisins and Onion Sauce over the loins.
Cook for the remaining roasting time, making sure the pork reaches 160-165 internal temp.

Let the pork rest for a few minutes before serving. Remove Pork and slice medallions to serve.
Stir peaches, Craisins and juice to blend, pour over pork.

I served with Rice Pilaf and Cabbage Saute`.









Cabbage Saute:
Slice fresh cabbage equal to about 3 cups
Chop onions - about a cup
Chop bright red/yellow/orange peppers - about a cup
Butter - 2-3 tablespoons

Saute` onions in butter till translucent
Add cabbage and peppers
Salt and Pepper to taste

Saute` till cabbage is tender only. Don't cook so long it becomes mushy.

Triple Chocolate Brownie Pie  : 
The easy recipe that's been floating around Pinterest.
It WAS easy and Delish!
Ingredients
  • 1 pouch brownie mix (the size for an 8x8 pan)
  • 1 cup chocolate chips (semi sweet or sweet)
  • 1 unbaked pie crust (regular size, not deep dish)
Instructions
  1. Prepare brownie mix according to package directions. Stir in chocolate chips.
  2. Spoon into unbaked pie shell. Bake in 350 degree oven for 25-30 minutes. Allow to cool slightly before serving.
  3. Top with vanilla ice cream and drizzle with chocolate sauce for third layer of chocolate :)

Slow Cooker Roasted Pork Chops


We just had this for dinner tonight.  The chops were very tender.  Made for a nice summer supper.  

Prep in the morning, including searing the chops, was fairly quick and very easy.  

At dinner time all I had to do was cook the noodles and corn on the cob.  Hope you enjoy!



Slow Cooker Roasted Pork Chops

Pork Chops  2 - 4  boneless
Potato - 1 large baking, quartered
Baby Carrots - gernous handful
Onion - 1 Large, sliced
Onion Soup Mix - 1 package
Spicy Mustard - 1 tablespoon (I like the course grain)
 1 cup water

Brown chops in a little oil, Olive or vegetable
Layer veggies in slow cooker crock with the mustard and water
Lay chops on top of veggies
Sprinkle soup mix over all

Cook on high for 4 hours, or till chops are fork tender.
After a couple of hours gently lift veggies and move chops to bottom, stirring the sauce.

Serve over egg noodles.
